Method

Follow the process step by step.

    Check the batter

    Stir gently and adjust with water or thin coconut milk until the batter flows easily around the curved pan.

  2. 02

    Warm gradually

    Heat the appam pan gently over medium heat. Apply a very light film of oil only if the seasoned surface needs it.

  3. 03

    Pour and swirl

    Pour batter into the centre, lift the pan carefully and swirl once so a thin layer reaches the sides.

  4. 04

    Cover and cook

    Return the pan to the heat and cover. Cook until the centre is set and the thin edge looks dry and lightly crisp.

  5. 05

    Lift and serve

    Loosen the edge gently and lift the appam out without turning it. Let the pan regain steady heat before repeating.

  • A flowing batter creates a thinner edge; overly thick batter will not travel easily.
  • Avoid excessive oil, which can stop the batter from gripping the sides.
