Method

Follow the process step by step.

    Prepare before heating

    Cut the vegetables to similar sizes and keep the onion, tomato, ginger and dry spices ready beside the stove.

  2. 02

    Preheat the kadai

    Warm the kadai gradually over medium heat, then add half the oil and let it spread across the cooking surface.

  3. 03

    Colour the vegetables

    Sear the vegetables in batches without crowding. Remove each batch when lightly coloured but not fully cooked.

  4. 04

    Build the masala

    Add the remaining oil, soften the onion and ginger, then cook the tomato and spices until the mixture thickens.

  5. 05

    Bring it together

    Return the vegetables, season and add a small splash of water if needed. Cover briefly, cook until tender and finish with coriander.
