Method

Follow the process step by step.

    Adjust the batter

    Stir the fermented batter gently. Add water a little at a time until it pours easily but still coats a spoon.

    Preheat gradually

    Place the tawa over low heat, then move to medium. Test with a few drops of water; they should sizzle and disappear.

  3. 03

    Prepare the surface

    Wipe the surface with a very thin film of oil. If the pan is smoking, reduce the heat and let it settle before pouring.

    Spread the dosa

    Pour a ladle of batter in the centre and spread it quickly in an outward spiral without pressing hard.

  5. 05

    Cook until crisp

    Drizzle a little oil around the edge. Cook until the base is golden and releases cleanly, then fold and serve.

  • Cool an overheated tawa briefly before spreading the next dosa.
  • If batter repeatedly sticks, clean the surface and restore a light seasoning layer before continuing.
  • Use ready-fermented batter; fermentation time is not included in the timing above.
